The Italian star chef Marcello Fabbri ‘fabbri’ is constantly creating new and changing compositions for you. His extraordinary five-course menus are characterised by the use of Mediterranean and regional products from his own vegetable garden.

Back in 2003, the ‘Anna Amalia’ restaurant at the Hotel Elephant in Weimar, where Fabbri was head chef at the time, was awarded a Michelin star. The Italian was the first to bring this award to Thuringia. Fabbri has now been head chef at ‘The First’ restaurant in Blankenhain since 2023. Just one year later, this was also honoured with a star.

The Sommelier

Experience Italy’s vinophile side and enjoy both well-known names and exciting new discoveries. From South Tyrol to Sicily, sommelier Thomas Stobbe has selected fresh white wines as well as mature, great red wines for you.

The selection is rounded off with elegant sweet wines and he also has the right wine for lovers of sparkling food accompaniments.
