The Italian star chef Marcello Fabbri ‘fabbri’ is constantly creating new and changing compositions for you. His extraordinary five-course menus are characterised by the use of Mediterranean and regional products from his own vegetable garden.
Back in 2003, the ‘Anna Amalia’ restaurant at the Hotel Elephant in Weimar, where Fabbri was head chef at the time, was awarded a Michelin star. The Italian was the first to bring this award to Thuringia. Fabbri has now been head chef at ‘The First’ restaurant in Blankenhain since 2023. Just one year later, this was also honoured with a star.

Torsten Stein discovered his passion for wine and hospitality whilst training as a restaurant manager at the Spa & GolfResort Weimarer Land.
After a winter season at the 5-star Hotel Trofana Royal in Ischgl, his path took him to Berlin, to the Michelin-starred Golvet. There, as Chef de Rang, he gained valuable experience and, under the guidance of sommelier Andrea Agosta, became particularly familiar with the world of Italian wine.
With the reopening of SENSES in Hanover – which was included in the MICHELIN Guide within a very short time – he took on the role of restaurant manager for the first time. Today, Stein is bringing his experience back to his home region. As a host, his main aim is to turn a visit to a restaurant into an experience: good food, good wine and an atmosphere where guests feel at ease and are happy to order an extra bottle now and then.
